KdG was engaged by Pieology Pizzeria to provide full-service construction documentation services for this fast-growing restaurant concept. Optimizing on the trend-setting fast-casual food service model, Pieology Pizzeria offers only the freshest ingredients for each personal pizza which is created by the patron in unlimited flavor combos, and all are stone oven-fired in less than 3 minutes.  A typical Pieology Pizzeria is 2,000 – 2,500 square feet of retail space, consisting of a front-of-house dining space seating approximately 50 guests, a theater-style preparation line, and a back-of-house kitchen. Professional architectural and engineering service consisted of onsite surveys of the leased space documenting existing conditions, providing a test fit floor plan, code studies, architectural and engineering construction documents, for a complete permitable set of construction documents. Quality construction documents completed in a thorough, expeditious manner is the key to a successful project. KdG facilitated the building permit process responding to all questions and comments by the reviewing authority.
